If Life Gives You Lemons, Make Apple Pie.

I am still considerably bummed regarding the Cleveland Clinic but am keeping pretty busy.
We go to a local apple orchard every year and pick apples, and I got a nice crop of Fujis this year. Some might not consider this the ideal pie apple, but I like its tartness and think it lends itself well to baking.
So, for your consideration:
TranceJen’s Fuck The Cleveland Clinic Apple Pie
- pastry for a double piecrust (if you want to make your own I have a very simple recipe:
Basic Pastry
3 cups all-purpose flour
1 cup vegtable shortening
3T sugar
1/2 cup ice water (not ice cold, ICE water)In a large bowl, put 3 cups of flour.
Add shortening and sugar, cutting in with 2 knives or using pastry blender until mixture resembles coarse crumbs.
Add ice water a tiny bit at a time, stirring in with a fork until mixture forms a ball.
Don’t overmix or add more water or pastry will be tough.
Divide pastry in half and flatten into two six-inch circles.
Refrigerate for at least 1/2 hour until use.)-1/4 cup of melted apricot jam or marmalade
-5 large Fuji apples
- 2 T lemon juice
-1/2 cup firmly packed brown sugar
- 2 T all-purpose flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2T butter
- 1T milk
- 1T granulated sugar
1. Heat oven to 400 degrees F and grease a 9 or 10 inch pie plate.
2. Roll out half of the pastry and fit it into the pie plate. Brush it with the jam and refrigerate.
3. Peel, core, and cut the apples into 1/4 inch slices. Place in a bowl and toss with lemon juice.
4. Combine brown sugar, flour, cinnamon, nutmeg.
5. Layer half of the apple slices in the chilled pie plate and then sprinkle with half the sugar mixture. Repeat the layers. Cut the butter into small pieces and scatter over the apples.
6. Roll out the top crust, place over the filling, trim and flute the edges. Cut three steam vents in the center.
7. Brush with milk and sprinkle with granulated sugar.
8. Bake in the center of the oven for 50-60 minutes. If the edges start to brown too quickly, cover with foil. Cool for at least 10 minutes before serving.
